Cauliflower Pizza

Here in the Hotchkiss home we are really trying to eat healthier meals and improve our lives through diet and exercise. I'll let you in on a little secret: Hotch & I are really overweight and out of shape. I saw a recipe for cauliflower pizza crusts and thought we should give it a try. It was fantastic! Recommend this to anyone looking for a healthier way to eat pizza or a fun way to get your kids to eat their veggies.


Start out by grating or ricing one cauliflower. Microwave it for 8 minutes (do not add water). Add 3 eggs, 3 cups of cheese (any kind will do), 3 tsp of garlic salt. Mix well.


We have a family of five so we made a triple batch. You could use 1 1/2 cups cooked riced cauliflower, 1 egg, 1 cup cheese and 1 tsp garlic salt in order to make a single serving.


Spray cookie sheets, pie pans or casserole dish before spreading thin layer of mixture. Note: the cauliflower crust will stick unless you spray heavily with vegetable oil. Heat oven to 425 degrees and cook for 18 minutes.


Let it cool for a few minutes. Gently use a spoon or spatula to lift it from pan in order to make sure it has not stuck. Next lightly sauce it.


Add cheese (any kind will do). We had a Mexican blend on hand. Here comes the best part: add your favorite toppings.






Bake for 5 minutes longer or until cheese has melted.


Voila! Yummy healthy cauliflower pizza.


The kids enjoyed making their own pizzas and they turned out really well.


My pizza got a little stuck to the pan (seriously need to spray pan heavily) so it got a little smooshed on the way to my plate. I just love the colors and textured of this meal!



Not too shabby for one relaxing Saturday afternoon. We'll have to make this more often! It was a hit with everyone in our house.

We have had such incredible weather the last few days here that the kids have been dying to get outside to scooter. The basement is unfinished so they scooter up a storm down there, but that limits them on space. Since there aren't any sidewalks here in Asheboro, NC we opted for the next best place which is the LDS church parking lot.


While Hotch and I sat in the van chatting this little angel kept checking on us and to make sure we were watching her every trick. Just love those eyes!


She looked so darling in her fashion-forward outfit. Those ruby slippers go everywhere with us. Not a day goes by without them being worn!

Braxton cracks me up with his pirate costume. That shirt is one of his favorites, but we were lucky enough to get the whole ensemble today.


Classic Braxton! Always being a funny guy and looking for a laugh!


Alyssa usually convinces the little ones to go to the basement to scooter. Braxton and Delaney think she is the coolest kid ever so of course they always follow her lead.


She really enjoyed the weather and having the space to speed around at last.


So grateful for the beautiful weather and a safe place to scooter.

Here Goes!

After enjoying other family blog "journals" I decided it was time to dive in too. Love the idea of capturing the day to day comings/goings of our amazing family and being able to reflect on our growth over the years. For the next month we plan to share places we have traveled to in the past along with experiences we have had over the years. We also plan to share highlights of each day. Having family and friends so far away has been tough, but we hope over time you will feel more connected to us as you read about our life journeys and where they take us.
